Ingredients:

  • 25ml Strawberry Liqueur
  • 10ml Averna (Italian Bitter)
  • Champagne

Method:

Pour the Liqueur and Bitter into a wine glass, add ice and stir, top up with Champagne stir again.

Garnish with a strawberry and serve with fresh strawberries and cream to be enjoyed on the side.

Zen Cha

Zen Cha

Ingredients:

  • 40ml Absolut Elyx Vodka infused with lemon grass
  • 2 dash camomile and lime bitter
  • 3 thai basil leaves
  • 1tsp Sinensis Sencha Green Tea
  • 50ml pineapple juice

Method

Pour all the ingredients into a shaker with ice, shake and double strain into a highball glass filled with one half cubed and one half crushed ice.

Garnish with a dried flower, dried fruit and glazed sugar.

Ingredients:

  • 40ml light rum
  • 15ml Goji Liqueur
  • 15ml lemon juice
  • 15ml red fruit tea summer cup
  • 15ml pineapple gum
  • 10ml egg white

Method:

Pour all the ingredients into a shaker filled with ice. Shake hard and long. Double strain into a chilled cocktail glass.

Garnish with dried flowers and dried fruit.

 

Grace

Ingredients:

  • 50ml pear vodka
  • 50ml fresh pear juice
  • 50ml fresh apple juice
  • 25ml fresh lemon juice
  • 1 teaspoon honey syrup
  • 3cms lemon grass
  • 4 or 5 mint leaves

Method:

Cut the lemon grass into 4 or 5 pieces and muddle in the bottom of the shaker add the remaining ingredients. Add ice. Shake vigorously for 10 seconds. Strain over crushed ice using a single strainer, a few particles of mint and lemon grass will pass through the filter – this is intentional.

Garnish with a sprig of mint and a lemon grass straw.

To make a lemon grass straw, trim a piece of lemon grass approx 2cms shorter than a plastic straw. Insert the straw into the lemon grass and place in the drink.

Little Tasty Italian

Little Tasty Italian

Ingredients:

  • 4 cl vodka
  • 2 cl Salvatore’s liquore di limone
  • 1 cl honey syrup
  • 2.5 cl fresh lemon juice
  • 1 dash of lemon bitters
  • Layer of licorice foam (see below)

Method:

To make the licorice foam: combine 13-1/3 oz / 40 cl strong licorice tea with 5 oz / 15 cl simple syrup and 3-1/3 oz / 10 cl egg white in a cream siphon. Charge with two NO2 canisters, shake well, and refrigerate the siphon for a few hours before use.

To make the drink: combine the ingredients in a shaker filled with ice and shake. Strain into a small chilled coupe, then discharge a layer of licorice foam from the siphon on top.

Garnish with a twist of lemon zest.

Ingredients:

  • 50ml Stoli Elit
  • 15ml maraschino liqueur
  • 2 slices of pickled beetroot plus 1 tsp of the juice
  • 10ml fresh lime juice
  • 3 dashes orange bitters

Method:

Gently muddle the beetroot, (not too much it should not be a puree) in the bottom of a shaker. Place all the other in the shaker together with ice, shake sharply, double strain into a chilled cocktail glass.

Garnish with a sprig of dill sitting on the edge of the glass and thin slice of heart shaped beetroot lying on top of the dill.
